Serves 6
2 full racks baby back ribs
1 onion, peeled and chopped
3 cloves garlic, peeled and chopped
3 tablespoons vinegar
2 tablespoons liquid smoke
1/4 cup mustard
1/4 cup ketchup
2 8-ounce cans beef broth
Barbecue dry rub
Favorite bottle barbecue sauce

Barbecue dry rub:
1/4 cup paprika
2 tablespoons granulated garlic
2 tablespoons granulated onion
10 whole peppercorns
1 teaspoon dried mustard
1 teaspoon chili powder
2 tablespoons cumin seeds
3 tablespoons coriander seed
1/4 cup kosher salt
1/4 cup brown sugar

Preheat oven to 375 degrees.  Place ribs in a large Dutch Oven or large baking pan.  Add onions, garlic, vinegar, liquid smoke, mustard, ketchup and broth.  Cover ribs with water.  Cook for 30 minutes.  Take ribs out of pan and place in heavy duty aluminum foil.  Add dry rub to ribs and wrap foil around ribs.  Smoke ribs  or use indirect heat on grill for 2 hours.  Unwrap, place ribs on direct heat and baste with barbecue sauce.  Cook for 20 minutes, basting periodically.

Barbecue Rub

Combine all ingredients in a clean coffee grinder.  Use rub directly on ribs.
