Popeye would love this dish.
1 tablespoon butter
1 tablespoon olive oil
1 shallot, peeled and minced
2 cloves garlic, peeled and minced
2 teaspoons flour
Pinch nutmeg
1 teaspoon salt
1/2 teaspoon pepper
2/3 cup half and half
2 pounds. fresh spinach, washed and trimmed
In a large saucepan, melt butter with olive oil over medium heat. Add shallots and garlic. Sauté for 1 minute. Stir in flour. Add nutmeg and salt and pepper. Add half and half and bring to boil. Add spinach. Reduce heat to low and simmer for 3 minutes. Serve.
