1 1/2 pounds ground beef
1 onion, peeled and chopped
2 cloves garlic, peeled and chopped
1 8-ounce can chopped pablano chilis
1 jalapeno, seeded and minced
1 4-ounce can tomato paste
Salt and pepper, to taste
4 strips bacon, cooked and chopped
1 16-ounce can chopped tomatoes
1 8-ounce can tomato juice
1 16-ounce can pinto beans
1 16-ounce can red or kidney beans
In a Dutch oven or large saucepan, brown ground beef over medium heat for 5 minutes. Add onions, garlic, pablano chilis and jalapeno. Sauté for 7 minutes. Stir in tomato paste. Season with salt and pepper. Add bacon, tomatoes, tomato juice and beans. Let simmer for 2 hours on medium heat. Garnish with cheese, onions and sour cream, if desired.
Patriot Tip
To peel a garlic clove, place it on a work surface and cover it with the side of a chef’s knife. Press firmly on the side of the knife, crushing the clove slightly. The skin should slip off easily.
