1/2 pound smoked salmon
1 red bell pepper, seeded and sliced
8 cherry tomatoes, halved
2 bunches mixed greens, washed and dried
1 package goat cheese, crumbled
Vinaigrette:
5 tablespoons balsamic vinegar
1 teaspoon Dijon mustard
3 tablespoons maple syrup
Pepper, to taste
1 cup olive oil
In a mixing bowl, whisk together balsamic vinegar, mustard, maple syrup, pepper and olive oil. Set dressing aside. Arrange mixed greens on a serving platter. Top greens with smoked salmon, red bell pepper slices, tomatoes and goat cheese. Drizzle salad with vinaigrette. Serve.
