Serves 6
2 Sashimi grade Ahi tuna
Salt and pepper, to taste
Old Bay Seasoning
2 bunches mixed salad greens, washed and dried
8 cherry tomatoes, halved
1/2 red onion, peeled and sliced
1/2 carrot, peeled and julienned
1 8-ounce can mandarin oranges
4 slices beets, from can, julienned

Dressing:
1 tablespoon wasabi
1/3 cup mayonnaise
2 tablespoons lemon juice
1 tablespoon lemon zest
1 tablespoon balsamic vinegar
Pinch of sugar

Heat grill or skillet to high.  Season Ahi tuna with salt and pepper and Old Bay Seasoning.  Sear tuna for 30 seconds on each side over high heat.  Remove from pan and set aside.  In a small mixing bowl, combine wasabi, mayonnaise, lemon juice, lemon zest, sugar and balsamic vinegar.  Whisk until smooth.  Season with salt and pepper, to taste.  Toss salad greens with dressing to coat.  Arrange on a serving platter.  Top salad with tomatoes, red onions,  carrots, beets, and mandarin oranges.  Sliced tuna cross-grain and serve on top of salad.
