8 ounces pad Thai noodles2 tablespoons Fish Sauce
3 tablespoons brown sugar1/4 lime juice, wedges for garnish
2 Thai chilis, chopped1/4 cup canola oil
3 shallots, sliced thinly3 cloves garlic, minced
1 pound shrimp, peeled and deveined
2 eggs, beaten4 green onions, sliced thinly
roasted peanuts, chopped1 sprig cilantro, chopped
bean sprouts, for serving
In a large pot with hot water, let pad thai noodles soak for 5 minutes. drain. In a bowl, whisk the fish sauce, brown sugar, lime juice and chiles. In a skillet, heat 3 tablespoons of oil. Add shallots, and garlic. Cook for 3 minutes. Add the pad thia noodles and stir fry for 3 minutes. Add the shrimp and cook until thoroughly cooked, about 3 minutes. Scrape the noodle mixture to the side of the pan and add the eggs. Stir and cook until fluffy, about 1 minute. Add the green onions and toss eveything together. Add the fish sauce mixture and stir fry 3 minutes. Transfer to serving platter. Top with peanuts, bean sprouts, cilantro and lime wedges. Serve.
