3 tablespoons peanut butter
1/4 cup water
1 clove garlic, peeled, minced
1 fresh Thai chili, minced, seeded
2 tablespoons cider vinegar
1 tablespoon honey
1 tablespoon soy sauce
1/4 cup tomatoes, diced
2 teaspoons fresh ginger, peeled, grated
2 tablespoons fresh cilantro, chopped
2 teaspoons fresh lemon juice
In a food blender, puree the peanut butter, water, garlic, chili, vinegar, honey, soy sauce, tomatoes, ginger, cilantro and lemon juice until smooth. Refrigerate until serving.
