Pie Filling:
1 cup cooked and mashed sweet potatoes
1 12-ounce can evaporated milk
1/2 cup butter, melted
2 cups sugar
4 eggs
1 teaspoon nutmeg
1 teaspoon cinnamon
1 teaspoon vanilla
Topping
1 cup brown sugar
1 tablespoon butter, melted
1 teaspoon vanilla
1 egg, beaten
Whipped cream topping
Preheat oven to 350 degrees. In a mixing bowl, combine pie filling ingredients. Mix well on medium speed with an electric mixer. Pour into pie shells. Bake for 30 minutes, or until golden brown. In a mixing bowl, combine topping ingredients. Mix well. Spread topping mixture over pies. Return to oven and bake 7 minutes. Serve with whipped cream topping.
